  • 2-lb salmon filet
  • 1 Tbsp avocado oil
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • ½ red onion (finely chopped)
  • 1 jar sun-dried tomatoes (8.5 oz, drained and chopped)
  • 5 oz baby spinach
  • 6 oz feta cheese crumbles
  • â…“ cup pesto sauce (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. Place the salmon on a parchment-lined baking sheet and drizzle with avocado oil. Season with sea salt and garlic powder.
  3. Bake for about 10 minutes to lock in moisture.
  4. In a skillet, heat more avocado oil over medium heat; sauté the onion until soft (5-8 minutes).
  5. Add sun-dried tomatoes and spinach; cover to wilt the spinach quickly.
  6. Mix in feta cheese until slightly melted.
  7. Remove salmon from the oven, top with vegetable mixture, and return to bake for another 8-10 minutes until it reaches an internal temperature of 145°F.
  8. Serve drizzled with pesto if desired.
