  • 454 grams dry pasta (penne, fusilli, or rotini)
  • 1 large red bell pepper (chopped)
  • ½ medium red onion (finely chopped)
  • ¾ cup pitted kalamata olives (halved)
  • ½ cup parsley (chopped)
  • ½ cup sun-dried tomatoes (sliced thin)
  • ⅓ cup extra-virgin olive oil
  • 4 tablespoons fresh lemon juice
  • 1 small clove garlic (minced)
  • ½ teaspoon salt (more to taste)
  • ¼ teaspoon freshly ground pepper (more to taste)

Instructions

  1. Boil the pasta in a large pot of salted water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop the bell pepper, red onion, parsley, halve the olives, and slice sun-dried tomatoes.
  3. In a jar with a lid, combine olive oil, lemon juice, minced garlic, salt, and pepper. Shake well to mix.
  4. In a large mixing bowl, combine cooled pasta with vegetables and feta cheese. Pour most of the dressing over the top and toss gently.
