  • 3 tbsp extra virgin olive oil
  • 1 medium brown/yellow onion – peeled and finely diced
  • 1 large carrot – washed, finely diced
  • 2 ribs celery – finely diced
  • 3 cloves garlic – finely chopped
  • 170 g cherry tomatoes – quartered
  • 5 cups vegetable stock
  • 1 tsp dried oregano
  • 1/4 tsp dried red chilli pepper flakes
  • 1 tsp fresh rosemary – finely chopped
  • 3/4 cup dried orzo/risoni pasta
  • 1 1/2 cups curly kale – stems removed – finely chopped and firmly packed
  • sea salt and freshly ground black pepper – to taste
  • 2 tbsp fresh basil leaves – finely chopped
  • freshly grated Parmesan cheese
  • extra virgin olive oil – a drizzle

Instructions

  1. In a large saucepan over medium heat, add olive oil and sauté the diced onion, carrot, and celery for about five minutes until softened.
  2. Stir in chopped garlic and cook for one minute until fragrant.
  3. Add vegetable stock, cherry tomatoes, oregano, red chili flakes, and rosemary; bring to a simmer.
  4. Once simmering, stir in the orzo pasta and cook for eight minutes while stirring occasionally.
  5. When the orzo is nearly done, mix in the finely chopped kale and allow it to wilt. Adjust seasoning to taste.
  6. If the soup is too thick, add more stock as needed. Serve warm with a drizzle of olive oil and fresh basil.
