  • 1 zucchini, sliced into half-moons
  • 1 red bell pepper, diced
  • 1 red onion, sliced into strips
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, halved
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 tablespoons lemon juice
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare ingredients by washing and chopping vegetables; cut chicken into bite-sized pieces.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add chicken pieces; season with salt and black pepper. Stir-fry until browned, about 5–7 minutes. Remove from skillet.
  4. In the same skillet, add zucchini, bell pepper, and onion; cook for about 5 minutes until softened. Add garlic and sauté for another minute.
  5. Stir in cherry tomatoes, olives, sun-dried tomatoes, herbs, and cooked chicken; mix well and heat through for an additional 3–5 minutes.
  6. Drizzle lemon juice over the stir fry; gently mix in crumbled feta cheese before serving.
