Mediterranean Chicken & Egg Power Salad is a vibrant, nutrient-dense meal that combines the rich flavors of the Mediterranean in a quick and easy dish. This salad features tender sliced chicken breast, creamy avocado, perfectly cooked jammy eggs, and a variety of fresh vegetables, all beautifully arranged on a bed of crisp greens.

  • 1 cooked chicken breast, sliced
  • 2 eggs
  • 1/2 avocado, sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/3 cucumber, diced
  • 56 kalamata olives
  • 1 tbsp crumbled feta cheese (optional)
  • 12 cups chopped romaine or mixed greens
  • Salt, pepper, and olive oil to taste

Instructions

  1. 1. Boil the eggs: Bring water to a boil in a pot. Carefully add the eggs and cook for 7-8 minutes. Cool in ice water, peel, and quarter.
  2. 2. Prepare the chicken: Use grilled or baked chicken breast and slice thinly.
  3. 3. Assemble the salad: In a large bowl or plate, layer chopped romaine as the base and arrange cucumber, cherry tomatoes, olives, avocado slices, chicken pieces, egg quarters, and feta on top.
  4. 4. Season & dress: Drizzle with olive oil and season with salt and pepper to taste. Garnish with fresh herbs if desired.
