  • 1 (6-oz) zucchini, sliced into rounds
  • 1 (6-oz) yellow squash, sliced into rounds
  • ½ yellow bell pepper, cut into strips
  • ½ red bell pepper, cut into strips
  • ½ red onion, cut into strips
  • 8-oz white button mushrooms
  • 1 cup cherry tomatoes
  • ½ cup olive oil
  • ½ cup soy sauce
  • ½ cup lemon juice
  • 1 garlic clove, crushed
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. In a gallon ziplock bag, combine all chopped vegetables.
  2. Whisk together olive oil, soy sauce, lemon juice, crushed garlic, salt, and black pepper in a bowl.
  3. Pour the marinade over the vegetables in the bag; seal tightly and refrigerate for at least 30 minutes.
  4. Preheat the grill to medium-high heat; remove excess marinade from veggies.
  5. Place the marinated vegetables in a large grill basket and grill for 15 to 20 minutes until tender and slightly charred.
