  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 1 cup chicken broth
  • 1/4 cup chopped pecans
  • 3 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons gluten-free reduced-sodium tamari
  • 1/4 teaspoon dried rosemary

Instructions

  1. In a shallow dish, mix gluten-free flour with salt and pepper. Dredge each chicken thigh in this mixture and set aside.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken thighs until golden brown on both sides, about 2 minutes per side, then transfer to a plate.
  3. In a bowl, whisk together chicken broth, maple syrup, pecans, mustard, vinegar, tamari, and rosemary. Add this mixture to the skillet and bring to a simmer.
  4. Return the chicken to the skillet, cover loosely with foil, and simmer until cooked through (about 10 minutes). Flip the thighs in sauce occasionally.
