Instructions

  1. Preheat your oven to 425°F (220°C). In a mixing bowl, toss baby potatoes, olive oil, minced garlic, salt, and herbs until coated. Spread on a baking sheet and roast for about 25 minutes or until golden.
  2. While potatoes roast, heat butter in a skillet over medium heat. Sauté minced garlic until fragrant, then add chicken chunks seasoned with salt and pepper. Cook for 6–8 minutes until browned.
  3. Add chopped mushrooms, diced red bell peppers, and sliced onions to the skillet. Stir occasionally until softened (about 5 minutes).
