  • 600 g sugar
  • 750 ml water
  • 500 ml high-proof alcohol alternative (like flavored vinegar)

Instructions

  1. Wash lemons thoroughly, scrub the skin to remove impurities, and pat dry.
  2. Use a vegetable peeler to remove only the yellow zest from each lemon, avoiding the bitter white pith.
  3. In a glass jar with an airtight seal, combine the lemon zest with high-proof alcohol alternative and seal tightly. Let it steep in a dark place for 30 days.
  4. After steeping, strain out the zest, then prepare a syrup by dissolving sugar in boiling water. Allow it to cool before mixing with the lemon infusion.
  5. Combine the cooled syrup with the lemon infusion, shake well, and let it rest for another 40 days before serving.
