  2. Squeeze the lemon juice into a sieve to remove seeds and pulp.
  3. In a saucepan, combine heavy cream, sugar, and lemon zest over medium-low heat until slightly thickened (about 5 minutes).
  4. Remove from heat and stir in lemon juice and vanilla extract.
  5. Strain the mixture through a sieve into a bowl for smoothness.
  6. Fill each hollowed lemon half with the mixture and chill in the refrigerator for at least 1-2 hours until set.
  7. Just before serving, sprinkle sugar on top and use a blowtorch to caramelize for that classic brûlée finish.
