  • 1 pound orzo pasta
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 cup cherry tomatoes, halved

Instructions

  1. Cook the orzo according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove from skillet.
  3. Sauté garlic in the same skillet until fragrant (about 30 seconds). Stir in chicken broth, lemon juice, zest, parsley, dill, salt, and pepper; simmer for one minute.
  4. Combine cooked orzo and cherry tomatoes with the sauce in the skillet until mixed well.
  5. Fold in the shrimp and heat through for another minute before serving.
