  • 1 cup all-purpose flour
  • ¼ cup sugar
  • ¼ cup light brown sugar
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1/3 cup unsalted butter-room temperature
  • ¾ cup sugar
  • 2 eggs
  • 2/3 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • Grated zest from 1 lemon
  • 2 tablespoons fresh lemon juice
  • ¾ cup powdered sugar
  • 12 tablespoons milk or cream

Instructions

  1. To make the lemon curd, whisk egg yolks, sugar, lemon zest, and lemon juice over simmering water until thickened (about 10 minutes). Stir in cold butter until melted. Allow to cool.
  2. Preheat oven to 350°F (175°C) and line a muffin pan with paper liners.
  3. In one bowl, mix flour, baking powder, baking soda, and salt. In another bowl, beat unsalted butter and sugars until creamy. Add eggs one at a time, then mix in Greek yogurt and fresh lemon juice.
  4. Combine dry and wet ingredients until just mixed. Spoon batter halfway into muffin cups, add a tablespoon of cooled lemon curd on top, then cover with more batter.
  5. Sprinkle streusel topping generously over each muffin and press down gently.
  6. Bake for about 25 minutes or until golden brown and set.
