  • ½ cup canola or vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • ⅓ cup fresh lemon juice (about 2 lemons)
  • 4 tsp lemon zest (about 2 lemons)
  • ½ cup buttermilk
  • For the Cream Cheese Frosting:
  • 8 oz cream cheese (cold)
  • 1 ½ cups powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups heavy whipping cream (cold)

Instructions

  1. Preheat the oven to 375°F (190°C) and line cupcake pans with paper liners.
  2. In a medium bowl, mix flour, baking powder, and salt; set aside.
  3. In a large bowl, whisk together oil and sugar until combined. Add eggs one at a time, mixing well after each addition. Stir in lemon juice, zest, and optional food coloring.
  4. Gradually add dry ingredients alternating with buttermilk; mix until just combined.
  5. Fill cupcake liners two-thirds full and bake for about 15-20 minutes until a toothpick comes out clean.
  6. For frosting, beat cold cream cheese until smooth, then blend in powdered sugar and vanilla. Switch to whisk attachment and gradually add cold heavy cream until fluffy.
  7. Once cupcakes are cooled, frost as desired.
