  • 2 sticks celery (chopped finely)
  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 1 tablespoon lemon juice
  • Salt & pepper to taste

Instructions

  1. In a large soup pot, heat the butter and olive oil over medium-high heat. Sauté the chopped celery, carrots, and onions for about 5-7 minutes until softened.
  2. Add minced garlic and cook for another 30 seconds until fragrant. Stir in flour and cook for an additional minute.
  3. Pour in the chicken broth while stirring to dissolve the flour completely. Add Italian seasoning and uncooked chicken breasts; bring to a boil.
  4. Reduce heat, cover slightly open, and simmer for about 15 minutes.
  5. Stir in uncooked orzo pasta and cook uncovered for another 10 minutes or until pasta is tender, stirring occasionally.
  6. Remove the chicken from the pot, chop into bite-sized pieces, return to the pot, and stir in lemon juice along with salt and pepper to taste.
