  • 1 ½ cups granulated sugar

  • 1 tbsp lemon zest
  • ½ cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup buttermilk or milk with 1 tbsp lemon juice
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your bundt pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and juice.
  4. Alternate adding dry ingredients with buttermilk; mix gently until combined.
  5. Pour batter into the bundt pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Let cool for 10-15 minutes in the pan before transferring to a wire rack to cool completely.
  7. For the glaze, whisk powdered sugar with lemon juice to desired consistency and drizzle over the cooled cake.
