  • 1/2 cup granulated sugar
  • 1 cup rolled oats
  • 1/4 cup all-purpose flour or whole wheat pastry flour
  • 4 large eggs
  • 1/2 cup honey
  • 1 tablespoon lemon zest
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together ½ cup unsalted butter and ½ cup granulated sugar until fluffy. Stir in 1 cup rolled oats and ¼ cup flour until combined. Press into the bottom of a greased baking dish.
  3. In another bowl, whisk together 4 large eggs until frothy. Mix in ½ cup honey, 1 tablespoon lemon zest, ½ cup freshly squeezed lemon juice, and ¼ cup flour until smooth. Pour over the crust.
  4. Bake for about 25-30 minutes or until set, with edges lightly golden.
  5. Allow cooling completely before cutting into squares.
