  • 1 pound ground beef
  • 3 heads baby bok choy, roughly chopped
  • 20 wonton wrappers, cut into quarters
  • 1 bunch green onions
  • 1 garlic clove
  • Ginger (fresh or ground)
  • 2 Tablespoons soy sauce, plus more to taste
  • 1 1/2 teaspoons rice or white vinegar
  • 1 Tablespoon brown sugar
  • 1 teaspoon Kosher salt, divided
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons cornstarch
  • Sriracha Hot Sauce or Chili Crunch (optional)

Instructions

  1. Prepare the broth: In a large saucepan over medium-high heat, combine the chicken stock, chopped green onion whites, sliced garlic, ginger, soy sauce, vinegar, brown sugar, and salt. Bring to a boil.
  2. Make the meatballs: In a mixing bowl, combine ground beef with finely sliced green onion tops, ginger, soy sauce, sesame oil, salt, and cornstarch. Mix well and form into one-inch meatballs.
  3. Cook the soup: Add meatballs to the boiling broth. Reduce heat to simmer and cook for 5 minutes. Stir in bok choy and quartered wonton wrappers; cook for an additional 8 minutes.
  4. Serve: Ladle soup into bowls and top with reserved green onions and optional hot sauce.
