  • 2 medium zucchini (sliced lengthwise)
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 0.5 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 inch baking dish.
  2. Layer half of the sliced zucchini on the bottom of the dish.
  3. Spread half of the ricotta cheese over the zucchini evenly.
  4. Pour half of the marinara sauce on top, followed by half of the shredded mozzarella.
  5. Repeat layering with the remaining zucchini, ricotta, marinara, and mozzarella.
  6. Sprinkle dried oregano on top before baking in the oven for 20-25 minutes until bubbly and golden.
  7. Garnish with fresh basil before serving.
