  • 3/4 cup cake flour
  • 1 tsp corn starch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup cold, unsalted butter, cubed
  • 1/2 cup light brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer, cream together cold butter and sugars until light and fluffy. Add egg and yolk; mix until combined.
  4. Gradually add the dry ingredients until fully incorporated. Fold in chocolate chips.
  5. Measure out six cookie portions (about 5.7 oz each) onto a parchment-lined cookie sheet.
  6. Bake for 10–12 minutes or until golden brown on top.
