  • 3 eggs (separated)

  • 1/2 cup full-fat coconut milk
  • 1 1/4 cups sweetened shredded coconut
  • 3 tablespoons coconut cream
  • 2 ounces cream cheese (softened)
  • 1 cup confectioners' sugar (sifted)
  • 1/2 cup shredded coconut
  • 1/2 cup (1 stick) butter, softened
  • 3 cups confectioners' sugar (divided)
  • 2 tablespoons lime zest
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 cup coconut flakes (toasted)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually incorporate coconut milk and shredded coconut into the mixture.
  5. Fold in dry ingredients until just combined. Whip egg whites separately until stiff peaks form and gently fold them into the batter.
  6. Spoon batter into liners, filling two-thirds full, and bake for 20 minutes or until golden brown.
  7. Cool cupcakes on a rack before frosting with key lime buttercream made from cream cheese, coconut cream, butter, confectioners' sugar, lime zest, and juice.
