  • 1 large chicken breast
  • 3/4 cup cottage cheese
  • 2 celery stalks (diced)
  • 2 green onions (sliced)
  • 1/2 cup shredded cheddar cheese
  • 3 tbsp chopped fresh jalapenos
  • 1/2 cup sour cream
  • Juice of 2 limes
  • 1/4 cup chopped fresh jalapeno
  • 1/4 cup fresh cilantro
  • 1/2 tsp onion powder
  • 1/2 tsp garlic salt

Instructions

  1. Cook the chicken breast by baking or grilling until fully cooked. Shred and set aside to cool.
  2. Dice celery, slice green onions, and chop fresh jalapenos.
  3. In a large bowl, combine shredded chicken, celery, green onions, jalapenos, cottage cheese, and cheddar cheese.
  4. In a blender, mix sour cream, additional jalapenos, cilantro, onion powder, garlic salt, and lime juice until smooth.
  5. Pour the dressing over the salad mixture and toss until well coated.
  6. Serve over greens or enjoy it directly from the bowl.
