- 3/4 cup cottage cheese
- 2 celery stalks (diced)
- 2 green onions (sliced)
- 1/2 cup shredded cheddar cheese
- 3 tbsp chopped fresh jalapenos
- 1/2 cup sour cream
- Juice of 2 limes
- 1/4 cup chopped fresh jalapeno
- 1/4 cup fresh cilantro
- 1/2 tsp onion powder
- 1/2 tsp garlic salt
- Cook the chicken breast by baking or grilling until fully cooked. Shred and set aside to cool.
- Dice celery, slice green onions, and chop fresh jalapenos.
- In a large bowl, combine shredded chicken, celery, green onions, jalapenos, cottage cheese, and cheddar cheese.
- In a blender, mix sour cream, additional jalapenos, cilantro, onion powder, garlic salt, and lime juice until smooth.
- Pour the dressing over the salad mixture and toss until well coated.
