- 12 oz chicken breast, diced
- 1 tablespoon olive oil
- 3 tablespoons butter, softened
- 3 garlic cloves, peeled
- 1 bunch of parsley, stems trimmed
- 1 lemon (juiced)
- 10 cherry tomatoes, halved
- 2 cups baby spinach, fresh
- 2 tablespoons Parmesan cheese
- In a blender, pulse together the softened butter, olive oil, garlic, parsley, salt, and pepper until fully combined. Set aside.
- Heat a non-stick skillet over medium-high heat. Add the diced chicken and sauté for about 3 minutes until browned.
- Squeeze in the juice of one lemon and sauté until most liquid evaporates (about 2 minutes).
- Reduce heat to medium-low and add one tablespoon of the prepared garlic butter to the skillet. Mix well.
- Add halved cherry tomatoes and sauté for about 1 minute until heated through.
- Stir in baby spinach leaves and sauté until wilted (about 1 minute).
- Serve topped with Parmesan cheese.
