  • 12 oz chicken breast, diced
  • 1 tablespoon olive oil
  • 3 tablespoons butter, softened
  • 3 garlic cloves, peeled
  • 1 bunch of parsley, stems trimmed
  • 1 lemon (juiced)
  • 10 cherry tomatoes, halved
  • 2 cups baby spinach, fresh
  • 2 tablespoons Parmesan cheese

Instructions

  1. In a blender, pulse together the softened butter, olive oil, garlic, parsley, salt, and pepper until fully combined. Set aside.
  2. Heat a non-stick skillet over medium-high heat. Add the diced chicken and sauté for about 3 minutes until browned.
  3. Squeeze in the juice of one lemon and sauté until most liquid evaporates (about 2 minutes).
  4. Reduce heat to medium-low and add one tablespoon of the prepared garlic butter to the skillet. Mix well.
  5. Add halved cherry tomatoes and sauté for about 1 minute until heated through.
  6. Stir in baby spinach leaves and sauté until wilted (about 1 minute).
  7. Serve topped with Parmesan cheese.
