  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup celery, chopped
  • 1 jalapeno, finely chopped
  • 4 cloves minced garlic
  • 14.5 ounces diced tomatoes
  • 3 ounces tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 cup bone broth
  • salt and pepper, to taste
  • shredded cheddar cheese (for serving)

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
  2. Add onions, celery, and bell pepper to the skillet and sauté until tender.
  3. Stir in jalapeno and minced garlic; cook for one minute before adding spices (chili powder, cumin) and cook briefly to meld flavors.
  4. Mix in diced tomatoes and tomato paste; stir well.
  5. Pour in the bone broth and season with salt and pepper; let simmer uncovered for 20 minutes.
  6. Serve hot topped with shredded cheddar cheese.
