  • 2 large fresh mangoes (cubed)
  • 1 lb fresh strawberries (cubed)
  • 1 lb green grapes (halved)
  • 1 lb red grapes (halved)
  • 4 cups apple juice
  • 4 packets unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Wash all fruits thoroughly and prepare by cubing or halving as needed.
  2. Lightly spray a bundt pan with pan spray and wipe off excess.
  3. In a medium bowl, combine 1 cup of apple juice with the vegan gelatin; set aside.
  4. Boil the remaining apple juice with sugar and lemon juice, then pour over the gelatin mixture. Whisk until dissolved and cool slightly.
  5. Layer the fruits in the bundt pan according to preference.
  6. Carefully pour the cooled gelatin mixture over the fruits until fully covered.
  7. Refrigerate for 3-4 hours until set, then unmold and serve.
