  • 2 tablespoons olive oil
  • 2 small onions (chopped)
  • 1 red bell pepper (chopped)
  • 23 jalapeno peppers (optional)
  • 2 stalks celery (chopped)
  • 6 cloves garlic (chopped)
  • 1 pound boneless, skinless chicken breast (chopped)
  • ½ pound turkey sausage (chopped)
  • ½ pound shrimp (peeled and deveined)
  • 34 tomatoes (chopped)
  • 1 tablespoon Cajun seasoning
  • 8 ounces tomato sauce
  • 1 cup chicken stock
  • 1 cup white rice

Instructions

  1. In a large pan over medium heat, sauté olive oil, onions, red bell pepper, jalapenos, and celery for about 6–7 minutes until softened. Add chopped garlic and chicken; cook until chicken is no longer pink.
  2. Stir in chopped tomatoes and cook for another 3 minutes. Add Cajun seasoning, tomato sauce, chicken stock, salt, and pepper; mix well.
  3. Incorporate rice into the mixture. Bring to boil then reduce heat to low. Cover and simmer for approximately 25–30 minutes until rice is tender.
  4. In a separate pan, sauté shrimp seasoned with salt, pepper, and Cajun seasoning on both sides for about 2–3 minutes. Mix into the jambalaya before serving.
  5. Serve hot garnished with chopped parsley and your favorite hot sauce.
