  • 3 garlic cloves (minced)
  • 2 tsp chicken bouillon
  • 1 tsp allspice
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp cayenne pepper
  • 1 tbsp brown sugar
  • 4 sprigs thyme (or 1 tsp dried)
  • 1 medium onion (chopped)
  • ½ red bell pepper (diced)
  • ½ green bell pepper (diced)
  • 2 tomatoes (diced)
  • 16 oz butter beans (rinsed)
  • 1 cup baby carrots
  • 2 tbsp tomato paste
  • Cooking oil
  • 3 cups water (plus 3 tbsp for cornstarch)
  • 23 bay leaves

Instructions

  1. Prepare the oxtail by washing, trimming excess fat, and patting it dry.
  2. Marinate the oxtail by mixing it with garlic, spices, bouillon, and vegetables; let sit for at least 30 minutes.
  3. Sear the marinated oxtail in your instant pot on sauté mode until browned on both sides.
  4. Sauté onions and bell peppers until soft; deglaze with chopped tomatoes and tomato paste.
  5. Return the oxtail to the pot with water and bay leaves; pressure cook on high for 20 minutes.
  6. After cooking, stir in butter beans and baby carrots; thicken the sauce with cornstarch mixed in water.
  7. Let simmer for a few minutes before serving.
