  • 1 lb chicken sausage (wild or sweet)
  • 1 medium onion, peeled and diced
  • 1 large carrot, peeled and diced
  • 3 cloves garlic, finely chopped
  • 1 large zucchini, washed and diced
  • sea salt and black pepper to taste (about 1 1/2 teaspoon sea salt and 1/2 teaspoon black pepper)
  • 15 oz canned beans (black or white beans, drained and rinsed)
  • 6 cups chicken broth
  • 28 oz diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3/4 cup ditalini pasta (or pasta of your choice)

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add chicken sausage and cook until browned, about 5–7 minutes.
  2. Stir in chopped onion, carrot, zucchini, and garlic, seasoning with salt and pepper. Cook for 10 minutes until vegetables soften.
  3. Add chicken broth and diced tomatoes; stir in rinsed beans along with basil and oregano. Bring to a boil.
  4. Once boiling, add ditalini pasta and reduce heat to medium. Simmer for about 15 minutes until the pasta is tender.
  5. Serve warm, garnishing with fresh herbs or croutons if desired.
