  • 1 brown onion
  • 2 carrots
  • 2 celery sticks
  • 4 garlic cloves
  • 6 cups low-sodium vegetable broth (or chicken broth)
  • Salt and black pepper to taste

Instructions

  1. Prepare the vegetables by roughly chopping the onion, carrots, celery, and garlic.
  2. In a large pot, combine vegetable broth and chopped vegetables. Season with salt and pepper; add optional bay leaf if desired.
  3. Bring to a simmer over medium-high heat for about 20 minutes until vegetables are tender.
  4. Remove bay leaf and blend the cooked vegetables with ½ cup of water until smooth.
  5. Return blended mixture to the pot; bring to a boil again.
  6. Stir in pastina pasta and cook for an additional 5–6 minutes until al dente.
