  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 6 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 1 tablespoon tomato paste
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 4 cups chicken stock
  • 1 cup uncooked ditalini pasta

Instructions

  1. In a large pot over medium-high heat, heat olive oil and brown the ground beef while crumbling it with a spatula. Use a slotted spoon to remove and set aside.
  2. Reduce heat and sauté onion, carrots, and celery in the same pot for about 5 minutes. Season with salt and pepper.
  3. Add garlic, Italian seasoning, and tomato paste; stir for about 1 minute until fragrant.
  4. Stir in tomato sauce, diced tomatoes, both types of beans, chicken stock, uncooked ditalini pasta, and the cooked ground beef. Season with salt and pepper.
  5. Bring to a simmer over medium-high heat then reduce to medium-low; simmer gently for about 5 minutes or until pasta is tender.
  6. Adjust seasoning if necessary and serve garnished with grated Parmesan cheese and fresh parsley.
