  • 1/2 lb ground beef (85/15 meat to fat ratio)
  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves (minced)
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper (more or less to taste)
  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 4 garlic cloves (minced)
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. Prepare the meatballs by mixing ground beef, bread crumbs, parmesan cheese, egg, minced onion, minced garlic, parsley, basil, red pepper flakes, salt, and black pepper in a bowl. Form small meatballs.
  2. In a large pot over medium heat, cook meatballs in olive oil until browned on all sides. Remove and set aside.
  3. In the same pot, sauté diced onions and carrots until softened. Add diced tomatoes and minced garlic; cook until fragrant.
  4. Pour in water and beef stock along with tomato paste. Stir well and season with salt, red pepper flakes, parsley, basil, and oregano.
  5. Return meatballs to the pot and let simmer for about 20 minutes. Add gnocchi during the last few minutes of cooking.
  6. Serve hot with freshly grated parmesan cheese.
