  • 1 cup pineapple chunks (fresh or canned)

  • 1/4 cup soy sauce
  • 2 tbsp brown sugar (or honey)
  • 1 tbsp grated ginger
  • 2 cloves garlic (minced)
  • 1 tbsp cornstarch (dissolved in 2 tbsp water)
  • 2 cups cooked rice (white or brown)

  2. Heat oil in a skillet over medium-high heat; cook chicken until golden brown, about 3-4 minutes per side. Set aside.
