  • 1/2 cup cold unsalted butter
  • 1/4 cup warm whole milk
  • 2 tablespoons sugar
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. Gradually add warm milk while stirring until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  3. Encase cold butter between parchment sheets and roll it into a rectangle; chill.
  4. Roll out the dough into a rectangle twice as long as it is wide, place chilled butter on one half, and fold the dough over to encase it completely.
  5. Roll out again and fold into thirds; repeat this process two more times for maximum flakiness.
  6. Cut triangles from the laminated dough and roll each triangle from the base to the tip to shape the croissant.
  7. Place rolled croissants on lined baking trays and proof until doubled in size (about 1 hour).
  8. Preheat your oven to 400°F (200°C) and bake for 15-20 minutes until golden brown.
