  • 2 teaspoons ginger (grated)
  • 3 garlic cloves (minced)
  • 1 tablespoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander
  • 1 teaspoon curry powder
  • 2 pounds chicken breast (cut into chunks)
  • 3 ounces tomato paste
  • 3 ounces red curry paste
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (14-ounce) can coconut milk

Instructions

  1. Heat the butter and olive oil in a large skillet over medium heat until melted.
  2. Add the diced onion and sauté for about 3–4 minutes until softened.
  3. Stir in grated ginger and minced garlic; cook for another minute until fragrant.
  4. Add garam masala, chili powder, mustard seeds, coriander, and curry powder; toast for 1–2 minutes.
  5. Add chicken chunks and cook until browned on all sides (5–7 minutes).
  6. Stir in tomato paste and red curry paste; cook for about 2–3 minutes.
  7. Season with salt and black pepper; pour in coconut milk and stir well.
  8. Bring the sauce to a simmer and cook for around 15–20 minutes until thickened and chicken is cooked through.
  9. Taste and adjust seasoning as needed before serving.
