  • 1 cup cherry tomatoes, halved

  • 1 red bell pepper, thinly sliced

  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tsp freshly cracked black pepper
  • 1 tsp cornstarch + 2 tbsp water (slurry)

  2. In the same skillet, reduce heat and combine honey, soy sauce, mustard, and black pepper. Stir in the cornstarch slurry and simmer for 2-3 minutes until thickened.

  4. Add sliced bell pepper and baby spinach; sauté until just tender (2-3 minutes).
