1 lb boneless skinless chicken (breast or thighs), chopped
1 tbsp olive oil
2 tbsp honey
Juice of 1 lime
1 clove garlic, minced
1 tsp cumin
1 tsp smoked paprika
Salt and pepper, to taste
1 ripe avocado, diced
1 head romaine or butter lettuce, leaves separated
1 cup canned black beans, rinsed
1 cup corn (canned, fresh, or thawed if frozen)
2 tbsp chopped cilantro
1 cup sour cream or Greek yogurt
1 tbsp lime juice
1 tsp chipotle or smoked paprika
Instructions
Heat olive oil in a skillet over medium heat. Add chopped chicken and stir in honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Cook for 8-10 minutes until browned and cooked through.
In a small bowl, mix sour cream (or Greek yogurt), lime juice, chipotle (or paprika), and salt until smooth. Chill until ready to use.
Lay out lettuce leaves on a serving platter. Fill each leaf with cooked chicken and top with diced avocado, black beans, corn, red onion, and cilantro.
Drizzle the sauce over each lettuce cup before serving.
