  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • Salt and pepper
  • 1 cup butternut squash, cubed
  • 1 cup cooked white rice
  • 1 cup steamed broccoli florets

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
  2. While the squash roasts, heat olive oil in a skillet over medium heat. Add cubed chicken and cook until golden brown. Stir in garlic, honey, soy sauce, paprika, salt, and pepper; simmer until cooked through.
  3. Steam broccoli florets for about 3-4 minutes until bright green.
  4. Assemble your bowl by layering rice as the base followed by roasted butternut squash, steamed broccoli, and honey garlic chicken. Garnish with fresh parsley and lemon wedges.
