  • 2 tsp. sea salt, divided
  • 1 tsp. fresh cracked pepper, divided
  • 1 tsp. oregano, divided
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika, divided
  • 8 oz. turkey strips
  • 2 Tbsp. extra virgin olive oil
  • 6 chicken thighs
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches, sliced
  • Fresh basil and additional fresh thyme for topping

Instructions

  1. Preheat oven to 350°F (175°C). Season chicken thighs with half the salt, pepper, oregano, garlic powder, and paprika.
  2. In a large sauté pan over medium heat, cook turkey strips for about 3 minutes until dark red. Remove and set aside on paper towels.
  3. Sear chicken thighs in the same pan for 1-2 minutes per side until golden brown.
  4. Sauté shallots in remaining oil for about 2 minutes; add grated garlic and cook for another minute.
  5. Pour in chicken broth, scraping up browned bits; simmer for 3 minutes.
  6. Stir in butter and honey until melted. Return chicken to the pan with thyme sprigs.
  7. Cover and bake for 15 minutes.
  8. Add peach slices on top; broil on high for 3-5 minutes until softened.
  9. Serve garnished with fresh basil.
