  • 3 tablespoons olive oil
  • 2 yellow onions
  • ½ cup packed basil leaves
  • 12 cups water or vegetarian broth
  • Freshly ground salt and pepper
  • ½ tablespoon olive oil (for caramelizing onions)
  • ½ teaspoon dried oregano
  • Optional: coconut milk or heavy cream

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the tomatoes and place them with garlic on the baking sheet. Drizzle with olive oil and season with salt and pepper.
