  • 1 lb orzo pasta
  • 1/2 lb kalamata olives, pitted and chopped
  • 12 oz sun-dried tomatoes in oil, drained and diced
  • 1 cup fresh spinach, sliced thin
  • 1/3 lb feta cheese, crumbled
  • 1/2 cup chopped red onion
  • 3 tbsp fresh basil, thinly cut
  • 3 tbsp fresh mint, thin strips
  • 2 qt water
  • 1/2 tsp salt
  • 1/2 tsp black pepper, ground
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • Zest from 1 lemon, grated

Instructions

  1. Bring 2 quarts of water to a boil in a large pot. Add salt.
  2. Add the orzo to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.
  3. Carefully drain the cooked orzo using a colander. Rinse briefly under cold water to stop the cooking process.
  4. While the pasta is cooking, chop kalamata olives, red onion, sun-dried tomatoes, spinach, basil, and mint.
  5. In a large mixing bowl, combine the drained orzo with all prepared vegetables. Add in black pepper and toss well.
  6. Drizzle extra-virgin olive oil and fresh lemon juice over the salad. Add lemon zest for an extra punch of flavor. Toss everything until evenly coated.
  7. Gently fold in crumbled feta cheese just before serving.
