  • 10–12 organic lemons (zest only)
  • 4 cups water
  • 3 cups sugar

Instructions

  1. Wash and thoroughly dry the lemons. Using a zester or vegetable peeler, carefully peel the yellow zest from each lemon, avoiding the bitter white pith.
  2. Place the lemon peels in a large glass jar and cover them with high-proof lemon juice. Seal tightly and store in a cool, dark place for 7 to 30 days, shaking occasionally.
  3. After infusing, combine 4 cups of water with 3 cups of sugar in a saucepan over medium heat until the sugar dissolves completely. Let it cool.
  4. Strain the infused lemon liquid to remove peels and mix it with the cooled syrup.
  5. Pour into clean glass bottles and let rest for at least one week before serving chilled.
