  • 2 boneless skinless chicken breasts (about 1 pound)
  • 8 ounces bowtie (farfalle) pasta
  • 1/4 cup extra virgin olive oil
  • Zest and juice of 1 large lemon
  • 1/2 cup chopped fresh herbs (parsley & dill)
  • 1 small shallot bulb, finely diced
  • Salt and pepper to taste

Instructions

  1. Tenderize chicken by placing each breast in a Ziploc bag and pounding to an even thickness.
  2. Season chicken with avocado oil, lemon juice, salt, pepper, onion powder, and garlic powder. Cook in an air fryer at 380°F for 11-14 minutes.
  3. Meanwhile, cook pasta according to package instructions until al dente; drain and rinse with cold water.
  4. In a large bowl, combine cooked pasta, diced chicken, olive oil, lemon zest and juice, chopped herbs, shallot, and adjust seasoning as needed.
  5. Serve immediately or refrigerate for up to four days.
