  • 3 cups fresh peaches, peeled and diced
  • ¼ cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar (for topping)
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup all-purpose flour (for topping)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it lightly.
  2. In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Gradually mix in the flour and salt until crumbly. Press into the base of the prepared pan to form the crust.
  3. Bake the crust for about 15 minutes; then set aside.
  4. In another bowl, combine diced fresh peaches, sugar, lemon juice, and cornstarch. Toss until well coated.
  5. Spread the peach filling evenly over the baked crust.
  6. In a separate bowl, whisk together eggs, sugar, sour cream (or Greek yogurt), flour, and vanilla extract until smooth. Pour this mixture over the peach layer.
  7. Bake for an additional 35–40 minutes until set and golden on top.
  8. Allow to cool completely in the pan before slicing into squares.
