  • 2 stalks celery, diced

  • 1/4 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 1 (15-ounce) can tomato sauce
  • 4 cups chicken or vegetable broth
  • 1 (15-ounce) can red kidney beans, drained and rinsed
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 cup ditalini pasta or small pasta of choice
  • 1 cup fresh spinach leaves

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent (3-4 minutes). Stir in garlic, carrots, and celery; cook until softened (5 minutes).
  2. Add oregano, basil, red pepper flakes, salt, and pepper; stir to combine.
  3. Pour in tomato sauce and broth. Bring to a simmer and cook for 15 minutes.
  4. Add drained beans and simmer for another 10 minutes.
  5. Cook pasta separately according to package instructions; drain.
  6. Stir cooked pasta and fresh spinach into the soup; cook for an additional 2-3 minutes until spinach wilts.
  7. Serve hot garnished with grated Parmesan cheese and fresh parsley.
