  • 2 cups coarsely or medium shredded zucchini (packed and not squeezed)
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 3/4 cup honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups whole wheat or spelt flour
  • Cooking spray
  • 1/2 cup walnuts (coarsely chopped, optional)

Instructions

  1. Preheat your oven to 350 degrees F. Line your 9 x 5 loaf pan with unbleached parchment paper and spray lightly with cooking spray.
  2. In a large mixing bowl, add the egg, applesauce, honey, vanilla, cinnamon, baking soda, baking powder, and salt. Whisk until all ingredients are well combined.
  3. Stir in the shredded zucchini until evenly distributed.
  4. Add the whole wheat flour gradually. Mix gently using a spatula just until combined. Avoid overmixing to keep the bread light and fluffy.
  5. Pour your batter into the prepared loaf pan and bake for 50–60 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
  6. Remove from oven and let it cool in the pan for about 10 minutes on a cooling rack. Carefully lift out of the pan using the parchment flaps and let it cool completely for another 30 minutes.
  7. Using a sharp serrated knife, cut into 12 slices. Serve warm or at room temperature.
