Instructions

  1. Preheat your oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Add grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt; whisk until combined.
  3. Gently stir in the flour until just mixed—avoid overmixing.
  4. Pour the batter into the prepared loaf pan and level with a spatula.
  5. Bake for about 50–60 minutes or until a toothpick inserted into the center comes out clean.
