  • 2 tablespoons avocado oil, divided
  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small head broccoli, cut into small florets
  • 1 (20 oz) can pineapple chunks
  • ¼ cup pineapple juice (reserved from the can)
  • ¼ cup rice apple vinegar
  • â…“ cup soy sauce (or tamari for gluten-free)
  • 1 ½ teaspoons sesame oil
  • 2 tablespoons arrowroot powder (or cornstarch)
  • Sesame seeds
  • Cooked rice, for serving

Instructions

  1. Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Add diced chicken; cook until browned and cooked through, then remove from the pan.
  2. In the same pan, add the remaining avocado oil and stir-fry diced red onion, red bell pepper, yellow bell pepper, and broccoli until tender-crisp.
  3. Whisk together reserved pineapple juice, rice apple vinegar, soy sauce (or tamari), sesame oil, and arrowroot powder (or cornstarch) until smooth.
  4. Return cooked chicken and pineapple chunks to the pan with vegetables. Pour the sauce over everything, stirring well to combine. Cook until the sauce thickens.
  5. Serve hot over cooked rice and garnish with sesame seeds.
