  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter
  • 1 large egg
  • 1 tsp almond extract
  • ¼ cup pure maple syrup
  • 6 tbsp unsweetened vanilla almond milk
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, whisk together oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, mix melted coconut oil or butter, egg, and almond extract. Stir in maple syrup and milk until combined.
  3. Gradually add oat mixture to the wet ingredients, stirring until just incorporated. Fold in diced peaches and chill dough for 30 minutes.
  4. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  5. Scoop rounded tablespoons of dough onto the baking sheet and flatten slightly.
  6. Bake for 9-12 minutes until golden around the edges; cool on the pan for 10 minutes before transferring to a wire rack.
