  • 1/4 cup Dutch cocoa powder
  • 1/3 cup sweetener (sugar, pure maple syrup, erythritol, or honey)
  • 1/2 cup milk of choice + 3 tbsp cornstarch
  • 3/4 tsp pure vanilla extract
  • Optional: 3 oz chocolate chips or broken-up bar

Instructions

  1. Heat the chosen milk in a saucepan over medium heat. Stir in salt, cocoa powder, and sweetener until combined.
  2. In a mixing bowl, whisk together cornstarch and 1/2 cup milk until dissolved.
  3. Once the milk mixture is warm (not boiling), add the cornstarch mixture into the saucepan and bring to a boil while stirring constantly for about 2 minutes.
  4. Lower the heat and simmer for an additional minute. Turn off the heat and stir in vanilla extract along with any optional chocolate pieces until melted.
  5. Transfer pudding to a refrigerator-safe container and chill for at least a few hours or overnight to thicken.
