  • 3 cups shredded chicken (cooked)
  • 4 cups cauliflower rice
  • 8 oz cream cheese (softened) or Greek yogurt
  • 1 cup shredded cheddar cheese (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 cup chopped spinach, broccoli florets, or sliced mushrooms

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a frying pan over medium heat, add olive oil and sauté the cauliflower rice for about 5 minutes until tender.
  3. In a mixing bowl, combine the sautéed cauliflower rice, shredded chicken, cream cheese, half of the shredded cheddar cheese, garlic powder, onion powder, paprika, salt, pepper, and your choice of vegetables.
  4. Transfer the mixture to a baking dish and top with the remaining cheddar cheese.
  5. Bake for 25–30 minutes until bubbling and golden on top.
  6. Allow to cool slightly before serving.
