  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar

  • Shredded coconut (optional)

Instructions

  1. Preheat the oven to 350F (175C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt.
  3. Stir in eggs, vanilla extract, and crushed pineapple (with juice) until well blended.
  4. Fold in optional chopped pecans and shredded coconut if desired.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
